Witbier & Weizen
Witbier and Weizen are both wheat beers, but with a different character. Witbier is cloudy and light, brewed with unmalted wheat and flavored with coriander and orange peel. A Weizen owes its character to the yeast, which imparts notes of banana and clove, with a generous head and a soft, full mouthfeel.
Both should be drunk fresh and chilled: around six degrees for white beer, slightly cooler for a Weizen. Pour a Weizen into a tall glass and let the foam have room; that is part of the experience. Alongside the classic versions, there are fruity and slightly sour varieties with, for example, blackberry or raspberry. This works best with salad, fish, mussels, or simply in the sun.

White beer or Weizen: what is the difference?
Both are brewed with wheat, and that is pretty much where the similarity ends. Witbier is Belgian and is spiced; Weizen is German and owes its flavor entirely to the yeast. Five beers, and not a single one that resembles each other.
Belgian white beer
Pale, cloudy, and fresh, usually around five percent. The brewer adds coriander and orange peel, which gives the beer its spicy citrus notes. The beer with which most people are introduced to wheat.
German wheat beer
Here, all the flavor comes from the yeast: banana, clove, and sometimes bubblegum, without anything being added. Fuller on the palate than wheat beer and with a high, firm head.
The sour side
A Berliner Weisse is a wheat beer that has been deliberately made sour, low in alcohol, and thirst-quenching. With red fruit added, it becomes almost like lemonade for adults, but drier.
Frequently Asked Questions
What is the difference between white beer and Weizen?
The origin and the source of flavor. Witbier is Belgian and is flavored with coriander and orange peel; Weizen is German and has nothing added, as banana and cloves come from the yeast there. Witbier is usually fresher, Weizen fuller.
Why is wheat beer cloudy?
Due to the wheat itself and the yeast that remains in the beer. That is not a fault, but intentional: the protein from the wheat provides body and foam. If you want it clear, leave the last layer in the bottle.
Does it come with a slice of lemon?
Not according to the brewers. In witbier, lemon overpowers the coriander and orange peel, which are intentionally included, and in weizen, the acidity flattens the head. Taste it without first.
At what temperature do you serve wheat beer?
Around seven degrees, in a tall glass. Pour gently and let the last centimeter with yeast swirl briefly in the bottle before pouring it in, so that it distributes evenly.
What does wheat beer pair with?
With fish, shrimp, a fresh salad, and young cheese. The gentle acidity and carbonation cleanse the palate without overpowering the taste of the dish. A Berliner Weisse with red fruit also pairs well with dessert.
Five wheat beers that all go in a different direction. Put the witbier and the weizen side by side, and you taste in one sip why they are two styles and not one.
